Since 1877 the Ruffino Winery has been a stable in the Italian wine scene. Originally a winemaking venture between two friends who enjoyed making wine, but not farming they purchased grapes from local farmers in Tuscany. Over the years the estate grew and subsequent generations were not as concerned about farming, so the estate gradually bought an increasing amount of land until present day where it is one of the largest wineries in all of Italy both in terms of land owned and amount of production. Production grew so quickly, in fact that Ruffino was the first Italian wine to be exported in bulk and is largely responsible for opening many international markets to Italian wine, specifically Chianti and Chianti Classico.

As with every Italian winery Ruffino has been both harmed and helped by the incredibly restrictive Italian wine laws. While the laws are antiquated they also serve the purpose to continue age old winemaking techniques that help to romanticize Italian wine in international markets. The current relaxation of classifications has allowed the estate room to experiment with blends of many different varietals including some which are native to Italy and other more international versions. As an example in the 1990's then estate started producing The Romitorio di Santedame - an intriguing blend of Colorino and Merlot. One of the only wineries in the world to blend these two grapes, Ruffino shows it's ability and willingness to experiment which has quickly become the trademark of world class Italian wine production.

Classico

Ruffino's history is long and extremely complex complete with family ownerships transfers, arguments and everything that you'd expect to accompany a piece of land that has had grapes planted on site since the year 1000. The current owners have continued to make wine on the estate in classic Italian fashion. They believe that all great wine is crafted in the vineyard, so they spare no expense in insuring that the grapes which are harvested are the absolute highest quality. Also, since they are still family owned Ruffino makes sure to farm in such a way that the winery can be open for another 1000 years. The last thing any family member wants is to be the one which ruined the land for all subsequent generations.

In the past ten years as production has continued to expand and international wine travel has become ever more common Ruffino has recently opened a visitors center which allows visitors to the estate to not only taste the wines, but receive a tour and learn about the history of both the winery and the property that it sits on. Ruffino likes to say that in every glass you get to experience a little bit of Italy, in that I couldn't agree more.

When I took up guitar as a high school kid in 1968, rock music had entered it's golden age. Certainly the influence of Chicago-style blues was huge, and had been for several years [particularly in Great Britain], but rock musicians were searching for ideas and inspiration from other genres as well, including classical [The Moody Blues, Procol Harum] country/western [The Byrds], Afro/Cuban [Santana] and Indian [experiments by The Beatles and others]. But, the blues notwithstanding, it was the influence of jazz that made the biggest impression on the music and musicians of the late '60's and early '70's.

Instrumental performance became a focus of interest for many during this period. The virtuosity of players such as Eric Clapton, Mitch Mitchell, Jimi Hendrix, and Jack Casady was being recognized and applauded by audiences, and rock musicians began finding and listening to new heroes among jazz's elite players. Long, improvised instrumental jams became the norm during live rock shows. Jazz tunes were being covered by rock bands [Tito Puente's Oye Como Va by Santana, Roland Kirk's Serenade to a Cuckoo by Jethro Tull]. The IIm7-V7 chord progression, the backbone of jazz harmony, began appearing in pop tunes. Brass rock bands Chicago Transit Authority [soon to be Chicago] and Blood, Sweat and Tears were writing jazz-rock songs, i.e. rock tunes but arranging them in a jazz fashion, replete with bop solos, odd time signatures, sophisticated chord changes and swing grooves.

Jack Daniel\'s

Jazz players had been recording on rock and pop sessions for years as anonymous session players, not for their jazz sensibilities but for their reading skills. But in the late '60's and 70's jazz musicians began appearing on rock records as featured players. Van Morrison's critically acclaimed Astral Weeks album featured bassist Richard Davis and drummer Connie Kay [of Modern Jazz Quartet fame], John Payne on reeds and Walter Smith, Jr. on vibes. Phil Woods soloed on Steely Dan's Dr. Wu and Billy Joel's Just the Way You Are. Yusef Lateef played on Leon Redbone's Double Time, and Charles Lloyd on The Doors Verdillac. And Joni Mitchell used personnel from Weather Report on 2 albums in the late '70's, including her collaboration with Charles Mingus in '79.

Mitchell was just one of several rock artists whose music reflected the influence of jazz. Carlos Santana recorded Caravanserai in 1972, a fusion of jazz, salsa and rock. He had recently become enamored with the music of John Coltrane and Miles Davis, and his new music expressed this interest. He collaborated on projects with John McLaughlin and Alice Coltrane [which included Jack DeJohnette and Dave Holland]. The release in 1975 of Blow By Blow signaled Jeff Beck's transformation from rock guitar icon to jazz fusion innovator. And, of course, there was Walter Becker and Donald Fagan of Steely Dan, who acknowledged jazz influences from the beginning of their recording careers. And with each successive album, the Steely Dan roster included an increasing number of heavy jazz players, contributing not only in section work but arrangements and solos as well.

Jazz Influenced Rock Music Of the Late 1960's and 1970's

Trappey's Louisiana Original Recipe Hot Sauce - 1 Gallon Overview

Trappey's is one of the oldest hot sauce brands in the United States. It is produced by the New Iberia, Louisiana-based company Trappeys Fine Foods, Inc. Trappey's is now owned by B&G Foods, a major food conglomerate. The company produces Red Devil Cayenne Pepper Sauce, Louisiana Hot Sauce, Inda-pep Pepper Sauce, Chef Magic Jalapeño Sauce and pickled jalapenos.

The company was founded in 1898, when Louisiana entrepreneur (and former McIlhenny Company employee) B.F. Trappey began growing tabasco chilies from Avery Island seed. He founded the company B.F. Trappey and Sons and, with the help of his ten sons and one daughter, began producing his own sauce, which he called "Tabasco." The McIlhenny family, makers of Tabasco brand sauce eventually responded to this challenge and a several decades-long feud by receiving a trademark for their Tabasco brand in 1906. Afterwards Trappey resorted to the more ubiquitous "Louisiana Hot Sauce."

Trappeys is a typical Louisiana-style sauce containing vinegar, peppers, and salt. The sauce uses xanthan gum to smooth out its consistency. Trappey's is noticeably milder than most other Louisiana-style sauces.
